My son asked me to make a cake for his birthday, and since he lives for mini eggs, I couldn’t resist creating this cute cake for him last weekend. His birthday always falls close to the Easter holidays, which I love because it gives me the perfect excuse to bake something spring-inspired like this and pop a little Easter egg into his party bags. Total win!
That said, this cake isn’t just for spring birthdays. It also makes a perfect centerpiece for your Easter table or even a laid-back spring dinner party. It’s the kind of cake that feels festive and fun without being too fussy. And who can say no to pastel-colored chocolate eggs on top of buttercream?
Mini Egg Cake Recipe

What You’ll Need
For the Victoria sponge, I used one of Mary Berry’s cake recipes.
- 4 free-range eggs
- 225g/8oz caster sugar, plus a little extra for dusting the finished cake
- 225g/8oz self-raising flour
- 225g/8oz softened butter
- 2 tsp baking powder
- 225g/8oz baking spread at room temperature, plus a little extra to grease the tins
For the buttercream, I used this BBC Good Food recipe.
- 600g icing sugar sifted
- 300g unsalted or salted butter, softened
Optional extras
- Finely grated lemon zest
- Finely grated orange zest
- A dash of vanilla extract
- A few drops of food colouring
- Cocoa powder to taste
- Mini eggs
I kept the cake pretty simple, but it still turned out super cute. I added a layer of strawberry jam to the bottom cake (because who doesn’t love that classic combo?), I then piped on some buttercream. Once the top layer was in place, I added more buttercream and decorated it with mini eggs all the way around.
To finish it off, I popped a handful of mini eggs into a clean tea towel and gave them a good bash with a rolling pin! Very satisfying! I sprinkled the crushed bits over the top, then added a light dusting of icing sugar for that soft, snowy look. And of course, I couldn’t forget the finishing touch: a big number 9 candle for my son’s birthday.
